    (10 oz. wheat flour, 8 oz. glutinous rice, 7 oz. minced pork, 5 oz. lard, 2 tablespoons soya sauce, 1.1/2 tablespoons cooking wine, 1/2 teaspoon salt, 2 flat tablespoons sugar, 2/3 teaspoon gourmet powder, 3 tablespoons minced scallion, 1 egg)

  4. "Four Joys" Dumplings

    (1 lb. wheat flour, 5 oz. minced beef, 5 oz. minced mutton, 4 oz. bamboo shoots; 2 tablespoons winter mushrooms, plumped; 1.1/3 tablespoons soya sauce, 1.1/2 tablespoons salted soya paste, 1.1/2 tablespoons cooking wine, 1 teaspoon gourmet powder, a pinch of pepper, 2 tablespoons scallion, 1 tablespoon ginger, 3 tablespoons sesame oil, a little each of carrot and pre-boiled green soya beans, a pinch of salt)

    (1 lb. wheat flour, 2 eggs, 5/8 cup water, 4 tablespoons sesame paste, 9 tablespoons soya sauce, 2 tablespoons vinegar, 4 tablespoons chilli oil, 2 heaping tablespoons sugar, 1 flat teaspoon Chinese prickly ash, 1.1/2 tablespoons sesame seeds, 3 tablespoons minced scallion, 2 tablespoons minced garlic, 1/2 teaspoon gourmet powder, 4 tablespoons sesame oil, 1/2 lb. cucumber)
