5 oz. lean pork
2.1/2 cups peanut oil (consumption about 8%)
1/2 teaspoon salt
1 tablespoon cooking wine
1/2 teaspoon gourmen powder
1/2 teaspoon spiced salt
1 egg
3 tablespoons wheat flour

1) Cut pork into diamonds of about 1/2X1/2X3/4 inches. Mix with salt, cooking wine and gourmet powder. Break and beat egg in a bowl. Add flour and stir the mixture into a smooth batter. Add a tablespoon of peanut oil and mix well. Put pork in, mix and coat well with batter.
2) Heat peanut oil in frying pan until it bubbles. Put in pork piece by piece with chopsticks, deep-fry until brown. Remove. Heat oil again and return pork to pan for another minute more of frying. Drain. Sprinkle on spiced salt before serving.
Notes:
(1) This dish, crisp on the outside and tender inside, goes well with drinks. Chicken, iish or prawn may be used instead of pork for the same recipe.
(2) Spiced salt is made of 1. Chinese prickly ash roasted, then crushed fine and mixed with half part of salt, or 2. "five-spice powder" stir-roasted with half part of salt.
