Pork Slices in Tomato Sauce

Fluffy Rice

5 oz. pork
1/2 cucumber
3 tablespoons lard
3 tablespoons tomato ketchup
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon gourmet powder
1/2 egg
1.1/2 teaspoons cornflour in 1 tablespoon water
2 teaspoons minced scallion
1 teaspoon minced garlic

1) Cut pork into thin slices of 1.1/4 inches square. Rub with mixture of egg and cornflour solution.

Wash cucumber. Holding knife at an angle, cut it into pieces of about 1 inch thick and then, turning them around, slice into diamond slices of 1/8 inch thick. Sprinkle on a pinch of salt and let set for a while.

2) Heat pan on fire. Put in lard and when this melts stir-fry pork, separating the slices. Add tomato sauce and stir some more. Add minced scallion and garlic. When it begins to smell delicious, squeeze cucumber slices of juice and put them in, followed by sugar, salt and gourmet powder. Toss and serve.
